If you are new to Linux just use Fedora. Everything will just work and you can install all your apps via the store.
Never had issues with Gnome on low end hardware but, you can disable animations in the accessibility settings. (No extensions needed!)
Compiling anything is a minority group even in the Linux community. Sounds like a massive headache.
Have had Windows remove my Grub entry plenty of times but have also had Windows “repair” partitions after a failed update which will nuke your Linux install.
I get where you’re coming from, really. I’ve been disappointed by Linux for years with the learning curve and random errors that no one can help with. I’d take a long break from anything server related and then once you think your ready to come back, go watch some videos that give you inspiration like Techno Tim. Try to make a game plan and stick to it. Use standard stuff like Debian and Proxmox for software and to get a head start try this. Wish you all the best mate.
Meshtastic just forwards your requests through other peoples devices until it gets where it needs. It acts as a big repeater system. I haven’t experimented with it much outside of just sending messages. I think you are able to transfer actual small files but that’s the limits.
Mint isn’t a bad ditro its just overhyped for new users.
Nobara is very overrated. Comes with so much bloat apps and is confusing for new users. Don’t understand why people recommended it.
It has some kernel tweaks and niche bug fixes for certain games but its just overrated.
Ubuntu is decent but definitely lost its touch over the years.

Try different a DE like GNOME and see if the issue occurs again. I’m running perfectly with a Radeon 6700XT on GNOME with Wayland.
